Whenever I start a new document, my font is automatically italized. When I
use a chart, each cell is automatically italized. How do I turn this off
permanently?

In a new Blank Document, go to Format | Font, choose the Regular version of
your default font, and click Default... Answer yes to the ensuing dialog.
